Sourcing

Heritage grain from three Irish mills. Butter from grass-fed herds in Montana's eastern corridor. Vanilla from a single Malagasy cooperative. Every ingredient is documented before it enters our kitchen.

Fermentation

Our sourdough starters are between fourteen and twenty-two months old. Brioche doughs cold-proof for a minimum of eighteen hours. We refuse shortcuts that compress flavour development.

Finishing

Hand-scored crusts. Tempered chocolate couverture at precisely 31.5 °C. Glazes brushed, never sprayed. The last five percent of effort produces ninety percent of what people taste.

Delivery Window

Same-day collection from our Fort Jay studio or chilled courier within a 60 km radius. Wedding and event orders require a minimum of nine days' lead time.

Dietary Clarity

Allergen matrices printed with every order. Gluten-free lines baked in a segregated section. Vegan lamination developed over eleven months of testing to match butter-based texture.

Waste Protocol

Unsold product is donated to Fort Jay Community Kitchen by 6 pm daily. Off-cuts become breadcrumb blends sold at the Saturday market. Zero baked waste enters landfill.

The Craft Behind the Counter

BakeWise Creators was not founded on a business plan. It began with a 4 am habit—mixing dough before the rest of Fort Jay woke up—and a conviction that industrial baking had stripped bread and pastry of their dignity.

Our kitchen operates on a single principle: time is the primary ingredient. A croissant that takes three days to laminate will always outperform one made in three hours. A cake that rests overnight will always carry a deeper crumb. We build our schedules around the dough, not the other way around.

We currently produce six bread varieties, four pastry lines, seasonal celebration cakes, and a rotating weekly special that has included everything from cardamom knots to black sesame financiers.

The Saturday Market Stall

Every Saturday from 8 am to 1 pm, we're at Fort Jay Farmers' Market with fresh-from-oven bread, pastries, and our famous brown butter cookies. No pre-order needed. First come, first served.

Yes. Chilled courier delivery is available within a 60 km radius of our studio at 302 Jenkins Stravenue. Wedding deliveries may extend further with advance arrangement. Contact us for a delivery quote.

Absolutely. For celebration cakes and wedding commissions, we schedule a tasting session at the studio. A small tasting fee applies and is credited against your final order. Email [email protected] to book.

We maintain a detailed allergen matrix and can accommodate most combinations including gluten-free, dairy-free, nut-free, and egg-free. Some products require substitution testing, which we'll discuss during your inquiry.

Terms of Service

Effective: January 2026

By placing an order or inquiry with BakeWise Creators, you agree to these terms. All orders are subject to availability and confirmation by our team. Prices quoted are valid for 14 days from the date of quotation unless otherwise stated.

Celebration cakes and wedding commissions require a 40% deposit upon confirmation. The balance is due 48 hours before the agreed delivery or collection date. Cancellations made fewer than 7 days before delivery forfeit the deposit.

We take every care in production and delivery, but perishable goods are subject to natural variation. Colour, texture, and minor decorative details may differ slightly from consultation samples. We are not liable for damage occurring after handover or courier delivery confirmation.

Subscription orders may be paused or cancelled with 5 days' notice before the next scheduled bake. Refunds for subscriptions are prorated from the next unbaked delivery.

These terms are governed by the laws of Ireland. Any dispute shall be subject to the jurisdiction of the Irish courts.
